White Chocolate Mirror Glaze Recipe
What you need….
3 teaspoons gelatin powder, plus ⅔ cups of cold water to bloom
1½ cups corn syrup
1½ cups granulated sugar
¾ cup water
¾ cup condensed milk
1½ cups white chocolate (this should be real white chocolate, not coating chocolate or candy melts)
How to make it…..
1. Sprinkle the gelatin powder into the cold water. Whisk to break up any lumps. Set aside for 3-5 minutes, to allow the gelatin to “bloom.”
2. In a small sauce pot, bring the glucose, sugar, condensed milk and ¾ cup water to a boil.
3. Turn the heat off and bloomed gelatin and chocolate.
4. Whisk gently until smooth.
